Beet & Feta Puff Pastry Bites

Preheat the oven to 400°F and line a baking sheet with parchment paper.

Make the beet filling. In a bowl, mix the cooked beets, feta cheese, cream cheese, honey, lemon juice, garlic powder, thyme or za’atar, salt, and pepper. Stir until everything is nicely combined.

Prepare the puff pastry. Roll out the puff pastry slightly, then cut it into small squares.

Fill each bite. Place a small spoonful of the beet mixture in the center of each pastry square.

Fold and seal. Fold the pastry into triangles or pinch the corners toward the center. Press the edges gently so the filling stays inside.

Brush and top. Brush each pastry bite with beaten egg, then sprinkle with sesame seeds if using.

Bake for 15–18 minutes, or until the pastry is puffed and golden brown.
